The Circle is back, my friends! And yes, I do say that each and every month. If you ask me, it's the best kind of greeting ever.

But moving on. I want to introduce you to this month's co-host. This girl is not only a sweet and encouraging friend, but a wise one at that. She's got a heart for Jesus and she lives in the PNW, too! Yep, we were meant to be friends. But I'll stop talking and let her take over my blog instead.

Hi there! I'm so excited to be joining Kiki in bringing you this month's The Circle linkup! My name is Susannah and I blog over at Simple Moments Stick. I live with my handsome hubby, Nate, in Portland, Oregon (Do you live nearby? I’d LOVE to meet you IRL!) where he attends Seminary to get his pastoral degree. Sometimes it scares me that I’m going to be a pastor’s wife but thankfully God is in control! Nate and I have been married just over two years but I definitely still give us newlywed status. Maybe we’ll always be newlyweds… Simple Moments Stick is a place where I share all aspects of my life. One day you I might share the stories of my family’s adoptions (I have eleven brothers and sisters), another day I might talk about my faith and what God is doing in my life, and a third day I might flaunt how awesome my husband is. (Although, he thinks that should be ALL I blog about) My heart behind my blog is to connect with other women around the country (and world!) to love on and encourage one another. When I emailed Susannah about possible topics, she suggested sharing favorite recipes. And upon reading her idea, I was sold. I mean, who doesn't love to eat and look at photos that make our mouths water? It's a blogger-must to love food, if you ask me.


So without further adieu, here's my favorite summertime recipe:

Corn on the cob. The essential for any barbecue, right? There's something about corn on the cob that screams summertime. And while summer may be on its way out, that doesn't mean there isn't time left to try this easy recipe! That, and who doesn't love corn on the cob and Mexican-inspired recipes?

And yes, it really is easy. Here's what you need:
  • Grilled corn on the cob
  • Grated Cotija cheese (found at most grocery stores)
  • Fresh lime juice
  • Chili powder
First off, when it comes to grilling, we (meaning my mom) usually takes the ears of corn and places them right on the hot grill, rotating them every few minutes. Usually, five ears of corn are done in about 15-20 minutes.

After they've cooled, we remove the husks, rinse them under water (to clean them off), and then they're ready to be eaten.

Now comes the fun part--flavor! I sound like Emeril or Bobby Flay writing this don't I? Anyway, simply grate some of the Cotija cheese, pull out your chili powder, and slice a couple of limes.

Then, all you have to do is sprinkle some cheese and chili powder on top of the ear of corn and squeeze some fresh lime juice on top. Yep, it really is that easy.
