PROJECT 365: WEEK 28.

Please note that this post could also be called "in which Kiki nearly forgets about this 365 project of hers." Yeah. You would think that taking photos every day would get you into some sort of rhythm but summer has taken over my brain and I have somehow forgotten everything (who knew that not having a set routine could do that to you?).

Anyway, I've been trying to escape the heat these past few weeks by waking up early, working out in the mornings and then hiding out in the air-conditioned house in the afternoon. We like to call if the cave, because come the evenings, it really is a cave-like room. So with a house full of girls, that makes it a girl-cave, right?

But I digress. I hope you are all having a great week so far and are keeping cool! Speaking of cool, do you have any great cool summer recipes? I'm all for eating salads right now--mango salsa chicken salad being one of my current faves!

  1. ...I have never had grilled romaine, but that looks SO good. Do you put any oil on it or just the cheese?

    1. It's actually amazingly delicious! My mom made it and I think she lightly oiled it (so it wouldn't stick to the grill). And then you can add some pepper or salt, to taste. And then once it's grilled, we sprinkled the parmesan cheese last. I hope you get a chance to try it! It's super yummy. :)

  2. That grilled romaine looks so good! All I've wanted lately is a Caesar salad, but technically I'm not supposed to have those. It's going to be a long 5 months. :)

    1. It really is! It's super easy, too. Just a head of lettuce with a little oil, pepper, and parmesan cheese. :) And I had no idea you can't have Caesar salad! Is it because of the anchovies in the dressing? Anyway, the grilled romaine would make a fun substitution--no dressing is used at all!

  3. That grilled romaine looks amazing! I've never had grilled romaine, but I definitely want to try now! It's been pretty hot in Burbank, but we don't make it to the beach that often. We would have to drive through LA, which isn't super fun. We'll make it there sometime.

    1. It's really yummy and definitely worth a try. I'll admit, I was a little skeptical (the idea of grilling lettuce seemed so weird!) but my mom wanted to try and I'm glad I did! :) And I hope you get a chance to make it to the beach! It's been pretty hot (for the PNW, that is) so a trip to the beach was a must--it was definitely worth the drive!

    1. Yes, they are! We have about 6 bushes in our yard and they've been there for some time (aka the bushes are HUGE now). Blueberry bushes are a must! :)

    1. I know, right? Berries are such a staple for the summertime and having them right in our backyard makes me a little spoiled since I can step outside and eat/pick as many as I want. :)

    1. It's amazing! I never would have paired lettuce with a grill (texture is a huge thing for me food-wise) but it's actually surprisingly yummy and easy to make!

    1. Ooh, that sounds delicious! I love pesto in sandwiches! I usually just add sliced tomatoes but sundried tomatoes sound amazing, too!

  8. THE BEACH!!!!!! :)

    Do you have a favorite smoothie recipe? Or one that you've made that you really liked? I'm terrible about smoothies...I got a taste for the Jet Teas that I served at a coffee shop that I worked for and now real fruit just doesn't do it for me. :/ Right now I'm sipping on this smoothie that I made in our vitamix: 1/2 frozen banana, 1 TBSP peanut butter, 1 tsp. cocoa powder (unsweetened), 1 tsp. vanilla, and a splash of milk. That's as "healthy" as my smoothies get so far, but I'm trying!

    Tell me more about grilled romaine, I have NEVER heard of that!

    That mango salsa chicken salad sounds really good too!

    1. I know, the beach!!! It was a long overdue trip and so worth the drive for some cooler air and some time away from the internet, too. :)

      I actually don't really have a favorite recipe, I just use a basic green smoothie recipe and adapt it according to the fruit we have, what's in season, and what I feel like. I make my smoothies in batches (and freeze them so I don't have to make them every day) so I'm not sure what the portions would be for one smoothie but I typically use 1/2 bag of fresh spinach; 1/3 cup Greek Yogurt; 2 cups of coconut milk (or plain milk or coconut water); 2 frozen bananas, and a couple cups of frozen or fresh fruit.

      If I wasn't allergic to peanut butter (or just peanuts in general), I would consider using nuts, too, since I've seen them in a lot of recipes! I might have to try almond butter or something. :)

      And grilled romaine is actually pretty good! My mom had seen it in a few recipe books and such. I was a little skeptical at first (I mean grilling lettuce?) but it was surprisingly good and easy to do. I don't know exactly what my mom put on it, but I think it was just a little oil (so it wouldn't stick) and then you grill it and sprinkle some Parmesan cheese and black pepper on top. It's worth a try, if you ask me!

    1. I know, right? I hadn't heard of it until a few weeks ago when my mom told me about it! I was a little skeptical at first (I mean, grilling lettuce?) but it's surprisingly yummy and I'm hoping we get a chance to try it again this summer. There are tons of recipes out there for it, but it's easy and I hope you get to try it, too! :)
